Ingredients

  • 3 large sweet potatoes, peeled and cubed (1-inch pieces)
  • 3 tbsp olive oil
  • 2 tsp Cajun seasoning
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • 1/2 tsp brown sugar
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh cilantro, chopped
  • Lime wedges for serving

    Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper.

    In a large bowl, whisk together olive oil, Cajun seasoning, smoked paprika, garlic powder, cayenne, brown sugar, salt, and black pepper.

    Add sweet potato cubes to the bowl and toss until every piece is thoroughly coated.

    Spread sweet potatoes in a single layer on the prepared baking sheet — do not overcrowd or they will steam instead of roast.
