Chicken Noodle Soup
Classic homemade chicken noodle soup that heals the soul. Perfect when youre feeling under the weather.
Ingredients
- 1 whole rotisserie chicken, shredded
- 8 cups chicken broth
- 3 carrots, sliced
- 3 celery stalks, sliced
- 1 onion, diced
- 3 cloves garlic, minced
- 2 cups egg noodles
- 2 bay leaves
- 1 teaspoon thyme
- Fresh parsley
- Salt and pepper to taste
Instructions

In a large pot, saute onion, carrots, and celery in 2 tbsp butter for 5 minutes.

Add garlic and cook 1 minute.

Pour in chicken broth. Add bay leaves and thyme.

Bring to a boil, then reduce heat and simmer 15 minutes.

Add egg noodles and cook according to package directions.

Stir in shredded chicken. Heat through.

Remove bay leaves. Season with salt and pepper.
