Loaded Baked Potato Soup
Thick and creamy potato soup loaded with bacon, cheese, and sour cream. Like a baked potato in soup form.
Ingredients
- 6 large russet potatoes, peeled and cubed
- 8 slices bacon
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup sour cream
- 2 cups sharp cheddar, shredded
- 1/2 cup butter
- 1/2 cup flour
- Green onions
- Salt and pepper to taste
Instructions

Cook bacon until crispy. Crumble and set aside.

Boil potatoes until tender, about 15 minutes. Drain.

In a large pot, melt butter. Whisk in flour and cook 1 minute.

Gradually add broth, whisking constantly.

Add potatoes. Mash some against the side for thickness.

Stir in cream and 1 cup cheese. Heat until cheese melts.

Remove from heat. Stir in sour cream.
