Creamy Tomato Basil Soup
Silky smooth tomato soup with fresh basil. The perfect companion to a grilled cheese sandwich.
Ingredients
- 2 cans (28 oz each) whole peeled tomatoes
- 2 cups vegetable broth
- 1 cup heavy cream
- 1 onion, diced
- 4 cloves garlic, minced
- 1/2 cup fresh basil leaves
- 2 tablespoons butter
- 1 teaspoon sugar
- Salt and pepper to taste
- Croutons for serving
Instructions

Melt butter in a large pot over medium heat.

Saute onion until soft, about 5 minutes. Add garlic, cook 1 minute.

Add tomatoes with their juices, breaking them up with a spoon.

Pour in vegetable broth. Add sugar, salt, and pepper.

Simmer for 20 minutes.

Remove from heat. Add basil leaves.

Use an immersion blender to puree until smooth.

Stir in heavy cream. Heat through but dont boil.

Serve with croutons and extra basil.
