Chicken Tikka Masala

Ingredients

  • 2 lbs boneless chicken thighs, cubed
  • 1 cup plain yogurt
  • 2 tablespoons garam masala, divided
  • 1 can (14 oz) crushed tomatoes
  • 1 cup heavy cream
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 2 tablespoons ginger, grated
  • 2 tablespoons butter
  • 1 tablespoon cumin
  • 1 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper
  • Fresh cilantro for garnish

Instructions

    Marinate chicken in yogurt and 1 tablespoon garam masala for at least 30 minutes.

    Thread chicken onto skewers and broil or grill until charred, about 4 minutes per side.

    In a large pan, melt butter. Saute onion until soft.

    Add garlic and ginger, cook 1 minute.

    Add remaining garam masala, cumin, turmeric, and cayenne. Stir for 30 seconds.

    Pour in crushed tomatoes. Simmer for 15 minutes.

    Stir in heavy cream and simmer 5 more minutes.

    Add grilled chicken pieces to the sauce.
