Ingredients

  • 3 lbs chicken pieces (drumsticks, thighs, wings)
  • 1 cup buttermilk
  • 2 cups panko breadcrumbs
  • 1/2 cup flour
  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 tablespoons butter, melted

    Soak chicken pieces in buttermilk for at least 1 hour or overnight.

    Preheat oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top.

    Mix panko, flour, and all seasonings in a shallow dish.

    Remove chicken from buttermilk, letting excess drip off.

    Coat each piece thoroughly in the breadcrumb mixture.

    Place on wire rack. Drizzle melted butter over each piece.

    Bake for 40-45 minutes, flipping halfway through.
