Ingredients

  • 1 lb penne pasta
  • 2 tablespoons butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup parmesan cheese, grated
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

    Cook pasta according to package directions. Reserve 1/2 cup pasta water before draining.

    In a large skillet, melt butter over medium heat. Add garlic and cook for 1 minute.

    Pour in heavy cream and chicken broth. Bring to a simmer.

    Add parmesan cheese and stir until melted and smooth.

    Add sun-dried tomatoes and Italian seasoning. Simmer for 3-4 minutes.

    Toss in spinach and stir until wilted.

    Add cooked pasta to the sauce. Toss to coat, adding pasta water if needed.

    Season with salt and pepper. Garnish with fresh basil and serve immediately.
