Ingredients

  • 1 whole chicken (4-5 lbs)
  • 2 lemons, halved
  • 1 head garlic, halved
  • 4 tablespoons butter, softened
  • Fresh thyme, rosemary, and sage
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup chicken broth

Instructions

    Preheat oven to 425°F (220°C).

    Pat chicken dry inside and out. Season cavity with salt and pepper.

    Stuff cavity with lemon halves, garlic, and half the herbs.

    Mix softened butter with remaining chopped herbs.

    Gently loosen skin over breast and spread herb butter underneath.

    Rub outside with olive oil, salt, pepper, and paprika.

    Place chicken breast-side up in a roasting pan.

    Pour chicken broth into the bottom of the pan.

    Roast for 1 hour 15 minutes until internal temp reaches 165°F.
