Ingredients

  • 4 bone-in pork chops (1-inch thick)
  • 2 tsp Cajun seasoning
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 3 tbsp vegetable oil
  • 2 large yellow onions, thinly sliced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 2 tbsp all-purpose flour
  • 1 tbsp Worcestershire sauce
  • 1/2 tsp dried thyme
  • Salt and black pepper to taste
  • 2 tbsp fresh parsley, chopped

Instructions

    Pat pork chops dry with paper towels. Combine Cajun seasoning, smoked paprika, garlic powder, and onion powder; rub evenly over both sides of each chop.

    Heat vegetable oil in a large cast-iron skillet over medium-high heat. Sear pork chops 3–4 minutes per side until deeply browned. Transfer to a plate.

    Reduce heat to medium. Add sliced onions to the same skillet and cook, stirring occasionally, for 12–15 minutes until caramelized and golden.

    Add minced garlic and cook 1 minute. Sprinkle flour over onions and stir to coat, cooking 1–2 minutes to eliminate the raw flour taste.

    Gradually pour in chicken broth, scraping up browned bits from the bottom of the pan. Stir in Worcestershire sauce and thyme.

    Bring gravy to a simmer, then nestle pork chops back into the pan. Spoon gravy over the chops.

    Cover and simmer on low heat for 20–25 minutes until pork is cooked through and tender.
