Ingredients

  • 4 bone-in pork chops (about 3/4 inch thick)
  • 1.5 cups all-purpose flour
  • 1 tablespoon seasoned salt
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon smoked paprika
  • 1 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper
  • 2 eggs
  • 1/2 cup buttermilk
  • Vegetable oil for frying (about 1 inch deep)

Instructions

    Season pork chops on both sides with seasoned salt, garlic powder, and a pinch of black pepper. Let sit for 10 minutes.

    In a shallow bowl, mix flour, smoked paprika, onion powder, remaining garlic powder, black pepper, and cayenne.

    In another bowl, whisk together eggs and buttermilk.

    Heat about 1 inch of vegetable oil in a large cast iron skillet over medium-high heat to 350°F.

    Dredge each pork chop in the seasoned flour, then dip in the egg wash, then back in the flour for a double coating. Press the flour in firmly.

    Carefully place pork chops in the hot oil. Fry for 5-6 minutes per side until golden brown and cooked through (internal temp 145°F).
