Miso-Glazed Salmon with Bok Choy
Sweet and savory miso-glazed salmon fillets with tender bok choy. An elegant weeknight dinner bursting with umami flavor.
Ingredients
- 4 salmon fillets (6 oz each), skin-on
- 3 tablespoons white miso paste
- 2 tablespoons mirin
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey
- 1 teaspoon sesame oil
- 4 heads baby bok choy, halved
- 2 tablespoons vegetable oil
- 1 tablespoon sesame seeds
- 2 green onions, sliced
- 1 teaspoon fresh ginger, grated

Whisk together miso paste, mirin, soy sauce, rice vinegar, honey, sesame oil, and ginger in a small bowl.

Place salmon fillets on a foil-lined baking sheet. Spread half the miso glaze over the top of each fillet.

Let salmon marinate for at least 10 minutes while you preheat the broiler.

Broil salmon 6 inches from heat for 8-10 minutes until the glaze caramelizes and fish flakes easily.

While salmon broils, heat vegetable oil in a large skillet over high heat. Add bok choy cut-side down.

Cook bok choy for 2-3 minutes per side until lightly charred and tender. Season with a splash of soy sauce.

Plate salmon over bok choy, drizzle with remaining glaze, and top with sesame seeds and green onions.
