Stuffed Bell Peppers
Colorful bell peppers stuffed with rice, beans, corn, and cheese. A complete meal in an edible bowl.
Ingredients
- 6 bell peppers (mixed colors)
- 2 cups cooked rice
- 1 can (15 oz) black beans, drained
- 1 cup corn kernels
- 1 cup salsa
- 2 cups shredded Mexican cheese blend
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- Fresh cilantro
- Sour cream for serving
Instructions

Preheat oven to 375°F (190°C).

Cut tops off peppers and remove seeds. Place in a baking dish.

Mix rice, beans, corn, salsa, 1 cup cheese, and spices.

Stuff peppers with the rice mixture.

Add 1/4 cup water to the bottom of the dish.

Cover with foil and bake 25 minutes.

Remove foil, top with remaining cheese.

Bake 10 more minutes until cheese is melted and peppers are tender.

Garnish with cilantro and serve with sour cream.
