Ingredients

  • 1 lb penne pasta
  • 1/2 cup sun-dried tomatoes in oil, drained and sliced
  • 4 cloves garlic, minced
  • 3 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 3/4 cup Parmesan cheese, grated
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

    Cook penne in salted boiling water according to package directions. Reserve 1/2 cup pasta water before draining.

    In a large skillet, heat olive oil and butter over medium heat. Add garlic and cook for 30 seconds.

    Add sun-dried tomatoes and Italian seasoning, cooking for 2 minutes.

    Pour in heavy cream and chicken broth. Bring to a gentle simmer and cook for 5 minutes until slightly reduced.
