Creamy Tuscan Sun-Dried Tomato Pasta
A rich and creamy pasta with sun-dried tomatoes, spinach, and garlic Parmesan sauce. Italian comfort food at its finest.
Ingredients
- 1 lb penne pasta
- 1/2 cup sun-dried tomatoes in oil, drained and sliced
- 4 cloves garlic, minced
- 3 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup chicken broth
- 3/4 cup Parmesan cheese, grated
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish
Instructions

Cook penne in salted boiling water according to package directions. Reserve 1/2 cup pasta water before draining.

In a large skillet, heat olive oil and butter over medium heat. Add garlic and cook for 30 seconds.

Add sun-dried tomatoes and Italian seasoning, cooking for 2 minutes.

Pour in heavy cream and chicken broth. Bring to a gentle simmer and cook for 5 minutes until slightly reduced.

Stir in Parmesan cheese until melted and smooth. Add spinach and stir until wilted.

Toss drained pasta into the sauce. Add reserved pasta water a little at a time if the sauce needs thinning.
