Fresh Chimichurri Sauce
A vibrant Argentinian herb sauce perfect for grilled meats. This chimichurri comes together in minutes and packs incredible flavor.
Ingredients
- 1 cup fresh flat-leaf parsley, finely chopped
- 1/4 cup fresh oregano, finely chopped
- 4 cloves garlic, minced
- 1/2 cup extra virgin olive oil
- 3 tablespoons red wine vinegar
- 1 teaspoon red pepper flakes
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Juice of half a lemon

Finely chop the parsley and oregano by hand for the best texture. A food processor can make it too paste-like.

Combine chopped herbs, minced garlic, red pepper flakes, cumin, salt, and pepper in a bowl.

Pour in the olive oil and red wine vinegar. Add lemon juice.

Stir everything together and let sit at room temperature for at least 20 minutes to let flavors meld.

Taste and adjust seasoning — add more vinegar for brightness or more oil for richness.
