Korean-Style Braised Beef Short Ribs
Fall-off-the-bone tender short ribs braised in a sweet and savory Korean-inspired sauce with ginger, soy, and pear.
Ingredients
- 4 lbs bone-in beef short ribs
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 1 Asian pear, grated (or 3 tablespoons pear juice)
- 6 cloves garlic, minced
- 2 tablespoons fresh ginger, grated
- 2 tablespoons sesame oil
- 1 tablespoon rice vinegar
- 1 cup beef broth
- 1 onion, quartered
- 2 green onions, sliced
- 1 tablespoon sesame seeds
- Steamed rice for serving
Instructions

Season short ribs with salt and pepper. Sear in a hot Dutch oven with oil on all sides until deep brown. Remove and set aside.

Whisk together soy sauce, brown sugar, grated pear, garlic, ginger, sesame oil, and rice vinegar.

Place onion quarters in the bottom of the Dutch oven. Nestle short ribs on top.

Pour the soy-pear mixture and beef broth over the ribs.

Cover and braise in a 325°F oven for 2.5 to 3 hours until the meat is falling off the bone.

Remove ribs carefully. Strain the braising liquid, skim off the fat, and reduce by half in a saucepan.

Plate ribs over steamed rice, spoon the reduced sauce over top, and garnish with green onions and sesame seeds.
