Moroccan Spiced Beef Kofta with Harissa Yoghurt
Hand-shaped beef kofta spiced with cumin, coriander, and cinnamon, grilled until lightly charred, and served with a cooling harissa-swirled yoghurt and warm flatbread.
Ingredients
- 600 g beef mince (or lamb-beef blend)
- 1 small onion, grated
- 3 cloves garlic, minced
- 2 tsp ground cumin
- 1 tsp ground coriander
- ½ tsp cinnamon
- ½ tsp smoked paprika
- ¼ tsp cayenne pepper
- 2 tbsp fresh parsley, finely chopped
- 1 tsp salt
- 200 g Greek yoghurt
- 1 tbsp harissa paste
- 1 tbsp lemon juice
- 4 flatbreads, warmed
- Sliced cucumber and tomato, to serve

Combine beef mince, grated onion, garlic, all spices, parsley, and salt in a large bowl. Mix thoroughly with your hands until the mixture is cohesive. Refrigerate for 15 minutes to firm up.

Divide the mixture into 12 equal portions. Shape each around a flat metal skewer (or form into oval patties if using a grill pan) — about 10 cm long and 3 cm wide.

Preheat grill, grill pan, or barbecue to high heat. Lightly oil the cooking surface.

Grill kofta for 5–6 minutes, turning once halfway through, until nicely charred on the outside and cooked through.

Stir together yoghurt, harissa, and lemon juice. Season with a pinch of salt and swirl harissa through for a marbled effect rather than fully mixing.

Serve kofta on warm flatbreads with harissa yoghurt, sliced cucumber, and tomato. Garnish with extra chopped parsley.
