Spicy Italian Sausage and White Bean Soup

Ingredients
- 1 lb hot Italian sausage, casings removed
- 1 large onion, diced
- 4 cloves garlic, minced
- 2 cans (15 oz each) cannellini beans, drained and rinsed
- 1 can (14 oz) diced tomatoes
- 6 cups chicken broth
- 4 cups fresh kale, stems removed and chopped
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes
- 2 tablespoons olive oil
- Salt and pepper to taste
- Grated Parmesan for serving
- Crusty bread for serving

Heat olive oil in a large Dutch oven over medium-high heat. Add sausage and break it into crumbles. Cook until browned, about 6-7 minutes.

Add onion and cook for 3-4 minutes until softened. Add garlic and cook 30 seconds more.

Pour in chicken broth, diced tomatoes, Italian seasoning, and red pepper flakes. Bring to a boil.

Add cannellini beans, reduce heat to medium-low, and simmer for 15 minutes.

Stir in the chopped kale and cook for another 5 minutes until wilted and tender.
